1. Crispy Masala Okra (Bhindi)
Prep Time: 5 mins
Cook Time: 8-10 mins
Instructions:
Wash and thoroughly dry 250g okra, then slice them into 1/2-inch pieces.
In a bowl, toss the okra with 1 tbsp oil, 1/2 tsp turmeric powder, 1 tsp red chili powder, 1 tsp coriander powder, 1/2 tsp cumin powder, and salt to taste.
Preheat your air fryer to 180°C (350°F).
Place the seasoned okra in a single layer in the air fryer basket.
Air fry for 8-10 minutes, shaking the basket halfway through, until crispy. Serve hot as a side dish.
2. Spicy Paneer Tikka Bites
Prep Time: 5 mins
Cook Time: 7-9 mins
Instructions:
Cut 200g paneer into bite-sized cubes.
In a bowl, mix 2 tbsp thick yogurt, 1 tsp ginger-garlic paste, 1 tsp red chili powder, 1/2 tsp turmeric, 1 tsp garam masala, and salt.
Add the paneer cubes and toss gently to coat.
Preheat air fryer to 200°C (400°F).
Arrange paneer in a single layer in the air fryer.
Air fry for 7-9 minutes until golden brown and slightly charred, flipping once. Serve with mint chutney.
3. Quick Tandoori Chicken Skewers
Prep Time: 5 mins
Cook Time: 8-10 mins
Instructions:
Cut 250g boneless chicken into 1-inch pieces.
Marinate chicken with 2 tbsp tandoori masala paste (store-bought), 1 tbsp lemon juice, and salt.
Thread chicken onto small skewers (if using wooden, soak them first).
Preheat air fryer to 190°C (375°F).
Place skewers in the air fryer basket.
Air fry for 8-10 minutes, flipping halfway, until cooked through and slightly charred.
4. Crispy Masala Chickpeas (Chana)

Instructions:
Drain and rinse one 400g can of chickpeas, pat very dry.
Toss chickpeas with 1 tbsp oil, 1 tsp cumin powder, 1 tsp coriander powder, 1/2 tsp red chili powder, 1/4 tsp turmeric, and salt.
Preheat air fryer to 190°C (375°F).
Spread chickpeas in a single layer in the basket.
Air fry for 8-10 minutes, shaking the basket several times, until crispy. Great for snacking or adding to salads.
5. Air Fryer Aloo Tikki (Potato Patties)
Prep Time: 7 mins (if potatoes are pre-boiled)
Cook Time: 8-10 mins
Instructions:
Mash 2 medium-sized pre-boiled potatoes.
Mix with 1/4 cup finely chopped onion, 1 green chili (minced), 1/2 tsp ginger paste, 1/2 tsp cumin powder, 1/2 tsp chaat masala, 2 tbsp cornflour or breadcrumbs, and salt.
Form into small patties.
Brush lightly with oil.
Preheat air fryer to 180°C (350°F).

Instructions:
Take 2 ears of corn on the cob (husk removed).
Brush lightly with oil.

In a bowl, mix 2 tbsp cornflour, 1 tbsp rice flour, 1 tsp ginger-garlic paste, 1 tsp red chili powder, 1/2 tsp garam masala, a pinch of orange food color (optional), and salt with a little water to make a thick paste.
Toss cauliflower florets in the paste to coat.
Preheat air fryer to 200°C (400°F).
Place coated florets in a single layer in the basket.
Air fry for 9-11 minutes, shaking halfway, until crispy and cooked through. Garnish with curry leaves and serve with a squeeze of lime.
